Malteasers biscuit cake recipe

You will need:

  • 200g digestive biscuits
  • 300g milk chocolate and 300g dark chocolate
  • 135g butter
  • 185g golden syrup
  • 100g (or 3 standard size bags of) Malteasers
  • 1 Crunchie bar

1.Get prepared! Line and greasea 22cm x22cm tin and put to one side.

2.Chop 200g of milk and 200g of dark chocolate into small pieces and set aside for later.

3.Then crush your biscuits. I used a Nutribullet to do this for a really fine dust but you can leave some chunkier bits if you enjoy this texture. Again put to one side.

4.In a separate bowl, cut 2/3 of your Malteasers into half pieces and crush your Crunchie bar – set aside.

5.In a heavy bottomed saucepan, melt the butter and syrup together over a low heat. When they are melted, turn off the heat (leaving the pan on the ring) and add the chopped chocolate pieces until they have melted and you have a smooth chocolatey mix.

6. Next, simply add the biscuits to the chocolatey mix and fully combine. Add the Malteasers and Crunchie pieces and mix again.

7.Lightly press the cake mix in the lined tin and pop it in the fridge while you make the topping.

8. To make the topping, melt 100g milk chocolate and 100g dark chocolate over a bain-marie, or gradually in the microwave. Pour the melted chocolate topping over the biscuit cake, moving the tin until it forms an even layer.

9. Finally, roughly crush the remaining Malteasers using a rolling pin and sprinkle them over the melted chocolate topping. Return to the fridge to set.

10.When you are ready to eat the cake, remove it from the tin and cut it in to Malteaser slice portions of your choice (I recommend smallish as it is very rich!). This will be easier to do if you leave it out of the fridge for 20 minutes first. I like serving the cake at room temperature- enjoy!

You can use a different filling for the biscuit choice by compensating the weight of the Malteasters and Crunchie (about 130g) for whatever you fancy- for example you could try Rolos (I suggest minis), pure chocolate chunks, Lotus biscuits, nuts, or marshmallows. Get creative!
